This is my prize winning apple cake recipe from Symondsbury Annual Apple Day for the best apple cake using English apples preferably local. The secret is to deliver the cake hot from the aga, that’s if you get onto plate in one piece!
Ingredients4oz/110g sugar 4oz/110g butter 8oz/115g SR Flour 2½fl.oz/60ml milk 1 egg, beaten 12oz/340g apples 1oz/30g demerara sugar for sprinkling
MethodRub the butter into the flour until it resembles breadcrumbs. Mix in the sugar and chopped apples. Mix egg and milk and stir into the apple mixture and pour into a greased 9” circular tin as it cooks easier if not too deep. Sprinkle with demerara sugar and bake for 35-45 minutes.
